I'm watching El Hazard again. I never realized how deep this anime was when I was younger. It's unlike a lot of anime in that it takes place somewhere that isn't earth or space and really I think it's the land of the soul or higher self. The characters get there by way of a stargate and there is an eye in the sky that is sleeping. There's mushroom symbology everywhere and other wonderful things. I highly recommend it.
